Frederick Pollock is a wine enthusiast and adventure traveller from Scotland with a spirit and passion for meeting people and sharing his varied experiences from countless expeditions across the globe – from the Arctic Circle to the Tierra del Fuego, the Big Sur to the Great Barrier Reef.

Having visited vineyards and wineries on five continents, he arrived in Spain at the end of a transeuropean trip on his Triumph Bonneville motorcycle and set about exploring in detail this ancient country of winemaking from Catalonia to Bierzo and La Mancha to the frontier bodegas of Jerez. 

Since 2013 he has made the old university World Heritage city of Salamanca his home and has forged friendships and collaborations across the country which allowed him to realise a dream – to share his knowledge and passion for the culture, cuisine and of course wine of the authentic Spain with others, and offer personally-hosted, authentic wine experiences throughout the little-known and seldom-travelled jewels of the Iberian peninsula.
